Before we start making omelets, let's remember that eggs are temperamental. It is important that eggs are fresh from an organic market and kept cool until used. You must keep them cool enough to allow the whites to form properly and the yolks to become too runny if they're not kept at the right temperature. This can make your omelets look bizarrely colored. If you're going to cook them immediately, it is best if the eggs are still warm.

You might also try separating the egg before adding to the pan. Because this could cause your omelet to become curdled, you don't want any yolk to be mixed with any white.
