Before we start making omelets, let's remember that eggs are temperamental. You must get them fresh, organically, and keep them cold until you cook. You must keep them cool enough to allow the whites to form properly and the yolks to become too runny if they're not kept at the right temperature. This makes your omelets look weirdly colored. If you're going to cook them immediately, it is best if the eggs are still warm.
